Jack Skellington Cheesecakes

Jack Skellington Mini Cheesecakes Recipe

Makes 10-12 Servings in a Regular-Size muffin pan

Ingredients

  • 2 Sleeves of Graham Crackers
  • ½ Cup unsalted butter, melted
  • 1 Teaspoon black gel food coloring
  • 16 oz cream cheese, softened
  • ½ Cup sugar
  • 2 Teaspoons vanilla
  • 1 Cup heavy whipping cream
  • ½ Cup melted chocolate (semi-sweet or dark chocolate)
  • 2 Tablespoons heavy cream (optional)
  • 12 Cupcake liners
  • Piping bag or plastic zip-top bag

Directions

Step 1

Prepare your muffin pan by lining with cupcake liners, one in each cup.

Use a food processor or a ziploc bag with a rolling pin to crush the graham crackers. 

Step 2

Add the crushed graham cracker crumbs to a medium sized bowl and combine with the melted butter and black food coloring. Stir together until it looks like wet sand. 

Step 3

Add a heaping tablespoon of graham crackers into each of the cupcake liners and press into the bottom. Set aside the muffin tin. 

Step 4

Combine the softened cream cheese and sugar and cream with a mixer until smooth. 

Add in the vanilla and heavy whipping cream. Whip again on medium speed for one minute. Scrape down the sides and continue to mix again for another 30 seconds.  

Step 5

Pour the cheesecake mixture on top of the graham cracker mixture in each of the muffin cup. Add the filling just to the top of the liner.

Place in the refridgerator and allow to set for approximately 2-4 hours.  

Step 6

Once chilled, it is time to add the face decorations. 

To melt the chocolate, combine the chocolate and heavy cream (while the heavy cream is optional, it does allow the chocolate to be softer and not harden as quickly) and heat in a microwave safe dish for 30 seconds. Stir well. 

Heat for an additional 15 seconds at a time and stir well between each interval until smooth. 

Once melted, transfer the chocolate to a piping bag (no tip needed) or a small plastic zip-top bag. 

Step 7

Cut a small hole in the tip of the piping bag or corner of a plastic zip-top bag when ready to decorate.

How to Store

Cheesecakes can be stored in an airtight container in the fridge for 3 days or in the freezer for 3 months.
