This old-fashioned peanut butter cornflake cookies recipe is incredibly easy to make! No baking is needed for this easy Christmas cookie recipe that is sure to please a crowd!

Peanut Butter Cornflake Cookie Recipe

Ingredients
- 3 cups cornflakes cereal
- 1/2 cup light corn syrup
- 1/2 cup sugar
- 1/2 cup peanut butter
- 1 teaspoon vanilla
- Christmas sprinkles (optional)
Directions
Line a baking sheet with parchment paper and set aside.
Add the cornflakes to a large mixing bowl.
In a medium saucepan, combine sugar, corn syrup, peanut butter, and vanilla. Cook over medium heat, stirring frequently, until the mixture is bubbling.
Cook a few minutes more until the sugar is dissolved and the mixture is smooth. Remove from the heat.
Pour the peanut butter mixture over the cornflakes.
Fold the mixture together gently until all of the cornflakes are coated with the peanut butter mixture.
Drop by spoonfuls onto your parchment lined sheet and then add Christmas sprinkles on top.
Allow the cookies to chill in the refrigerator for 1 hour or until set.
