Cadbury Mini Egg Cookies Recipe

Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup Cadbury mini eggs, roughly chopped
- 1/2 cup semi-sweet chocolate chips

Directions
Preheat your oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper, set aside.
In a large mixing bowl, beat together the butter and both sugars, until smooth. Add the egg and vanilla extract, and mix until combined.

In a separate bowl, whisk together the flour, salt, and baking soda.

Add the dry ingredients to the wet slowly, mixing until just combined and a crumbly dough begins to form.

Fold in the chopped Cadbury mini eggs and chocolate chips.

Use a medium cookie scoop to scoop the cookies onto your parchment lined pan.

Bake 9-11 minutes, until cookies are starting to turn golden brown at the bottoms, cookies will still be pretty pale.

Allow the cookies to cool on the baking sheet for 5 minutes before moving to a cooling rack.
