Strawberry Fudge Recipe

Prep Time: 15 Minutes
Chill Time: 2 Hours
Yields: 16 1-Inch Pieces

Ingredients

Various baking ingredients including strawberry flavored pink candy melts, buttercream frosting, heart sprinkles, red candy melts, strawberry extract, and Valentine's Day nonpareils are perfect for creating delightful Valentine Fudge.

Directions

Place the red candy melts in a microwave-safe bowl and heat on high, in the microwave, for 2-3 minutes or until smooth when stirred. Stop every 15-30 seconds to stir during the melting process to ensure the candy melts do not start to burn.

A bowl of red melted chocolate is surrounded by small bowls of colorful sprinkles and pink chocolate discs on a white surface with a red and white towel.

Repeat step one with the pink candy melts, keeping the two colors separated.

Remove the lid and completely remove all metal film from the frosting and place it in the microwave for 45 seconds to 1 minute, or until fully melted and smooth.

Add the extract to the frosting and stir well.

*Do not add the extract directly to the chocolate or it will ruin it! The extract seizes the chocolate to a point that it is no longer usable.

A measuring cup with vanilla pudding is being mixed, with sprinkles nearby on a textured countertop.

Place half of the frosting in with the red candy melts and the other half with the pink candy melts.

Stir each color until they are fully mixed.

Line an 8 X 8 pan with parchment paper, making sure to leave some overhang.

Alternate pouring in the two colors in random spots, pausing to tap the pan in between so it evens out and removes bubbles.

Once all of your chocolate mixtures have been poured in and they are even, sprinkle the top of the fudge with as many Valentine’s themed non-pareils as you like.

Place in the refrigerator to chill for 2 hours or until hardened.

Helpful Tips

  • Store fudge in a sealed container in the fridge for up to two weeks or in a cool, dry spot for up to 1 week.
  • You can freeze fudge in a sealed container for up to 3 months.
  • If you can’t use candy melts, you can use white chocolate chips and color the chocolate with an oil-based food dye. Do not use water-based dye because it will ruin the chocolate.
  • If you can’t find strawberry candy melts, no problem. The extract still adds plenty of flavor. You can just use normal pink candy melts instead.
  • Hard fudge usually means that too much chocolate was used. Just reduce the amount next time you make the recipe.
  • Soft fudge (too soft) means that not enough chocolate was used. Adjust the amount the next time you make the recipe.
  • To flatten the top of the fudge and make it smooth, tap the pan on the counter to make the mixture settle evenly.
