Ingredients

  • 1/3 Cup Cream Cheese plus extra for decorating
  • 4 Slices Dark Bread rye or pumpernickel
  • 2 Cucumbers sliced
  • 1 Garlic Clove minced
  • 2 Cups Kale Microgreens or other type of sprouts
  • Piping Bag or Zip-Top Plastic Baggie

Method

  1. Place the cream cheese and garlic in a small bowl and blend together with a fork or the back of a spoon.
  2. Add 2-3 tablespoons of the microgreens into the cream cheese mixture. Stir together.
  3. Cut a piece of bread into 2 pieces lengthwise. Spread one half of the bread with the cheese mixture.
  4. Lay a few slices of cucumber on top of the cream cheese spread and the cover with a second piece of bread.
  5. Add some cream cheese to a piping bag or zip-top plastic bag with the corner snipped off. Then write the letters RIP on top. Add a border around the edge of the bread to resemble a tombstone.
  6. Add handfuls of micro greens or sprouts to a plate to resemble grass. Then arrange the sandwiches on the microgreens to serve. Alternatively, you could stand up the tombstone sandwiches on the plate of microgreens for a great display.

Notes

  • These sandwiches can be made ahead, but the bread will start drying out. We suggest only making these 3-4 hours ahead of time.
  • Any tea sandwich filling, such as tuna salad, egg salad, chicken salad or slices of meat and cheese, can be substituted for the cream cheese spread.
